It’s a fairly tough week - 8 miles with intervals, a nine miler general aerobic, 5 miles tomorrow and then 13 on Sat. Just did an easy 3 miles with some friends this morning, finished the proposal for my new book (Go Faster Food for Kids) and then spent a couple of hours in the kitchen having fun. I’ve thrown together a delicious-looking smoky black bean beef and chorizo chilli which we’ll have tonight with some fresh salsa and basmati rice, plus some marmalade flapjacks. Well I have to say they are a bit irresistible! The marathon training hunger has really set in with me and the old appetite is going great guns – all this running, combined with the freezing weather….I need flapjacks!
These flapjacks are surprisingly light, with a slightly chewy texture from the caramelised marmalade. I used my own home made marmalade which is quite bitter, so if you make them with shop-bought marmalade, it will probably be best to use something like Frank Cooper’s dark marmalade. Whatever you use, make sure it is thick-cut, with lots of lumps of oranges in it.
Ingredients
- 225g porridge oats (I use Sainsbury’s Taste the Difference Unrefined Jumbo Oats)
- 75g unsalted butter
- 2 Tbsp demerara sugar
- 2 Tbsp golden syrup
- 2 Tbsp thick cut marmalade
- Heat the oven to 180 C. Lightly grease a small baking tray 20cm x 20cm.
- Melt the butter in a large saucepan, then add the sugar, syrup and marmalade, cook on a very low heat until the sugar is dissolved.
- Add the porridge oats and stir well to combine. Turn off the heat.
- Transfer to the baking tray and bake in the oven for 20 mins until golden brown.
- Cool in the pan. Cut the flapjacks into about 12 squares after 5 minutes or so. Remove from the tray when cool if you can wait that long….

These are fantastic..flapjacks are my favourite treat, I`m a personal trainer so all my running customers have sampled these after a good workout. Everyone who has sampled them went home to make them. Brilliant.
I have just checked my cupboards and happily confirm that I’ll be making these tomorrow!!! I’m one of Charlotte Thompson’s customers and she rewarded me with a flapjack square (straight from the baking tray, still warm) after a run earlier today…. YUM! I was a very happy bunny :0)
Had an awesome run with Emma and Charlotte this morning – it was so cold that our breath was freezing on our eyelashes lol. Have just made these flapjacks with my kids and they are fantastic!
